Pies and other savoury treats.
Sometimes I just like to go to the fridge and throw a few ingredients together just to see what happens! Lats night this is what happened. My husband loved it!!! So I've wrote down the recipe for all...



Chicken and sundried tomato Quiche with pistachio nuts.

1 sheet of short crust pastry

2 small chicken breasts (broiled)
100gs semi dried tomatoes
1 small red sweet potato diced and baked
100g pistachio nuts
1 cup of cooking cream
1 cup of grated cheese
½ cup of grated parmesan cheese
1 tsp dried dill
4 eggs

Method.

Heat the oven to 180 degree’s.

Place the short crust pastry into a pie dish.

Cook the small diced sweet potato in a skillet until roasted, remove and allow to cool.
Chop the broiled chicken. (This is done by cooking the chicken in hot water, keeps it moist.) Place into the pie dish along with the semi-dried tomato, nuts. Sprinkle the combined grated cheeses over the top.

Crack the eggs into a bowl and whisk them into submission, then pour in the cream and dill, whisking lightly until combined. Pour slowly over the top of the ingredients in the pie dish, making sure you cover all of the dish, swish it a little by picking it up and tilting it gently to cover all the small spaces and gaps.

Then place in the oven and cook for 40 minutes. Just make sure you check it throughout the cooking time because ovens can vary.

For Lunch; Serve it with a rocket and mixed green salad splashed with caramel Balsamic, (and your favourite glass of white wine.) Or a refreshing glass of water.

Makes a lovely lunch time meal with the girls and a few laughs over a meal-  Or a family dinner with steamed greens and a glass of water.

Follow with coffee and a cake for dessert.
